Phu Quoc Island, Vietnam, Aug. 16, 1966: The An Thoi Nuoc Mam factory. The factory was just a thatch covered hut with a row of four vats for making Nuoc Mam, better known outside of Vietnam as fish sauce. Traditional Phu Quoc fish sauce has been made solely out of fermented anchovies — harvested from the waters surrounding the island — salt, and water for over 200 years.
